Late summer Green Gravad Laks

It's time to squeeze the last bit of summer of of this year...

The days are starting to get a little colder, but we still have the beautiful late summer sun... So why not hold on to the days of summer with som gravad laks salads.. And we have just the one for you!

You will need:

1 pack of HYGGE’s Gravad Laks Home Cure
500g salmon with skin
Fresh dill, for curing and for garnish 

For the dressing:

2 tbs honey
2 tbs rapeseed oil (or another flavourless veg oil) 
1 lemon
 Salt and pepper
10 cm cucumber
2 avocados
1 horseradish root

  • Cure the salmon as instructed on the Home Cure pack.
  • Mix honey and oil in a bowl. Season with lemon, salt and pepper.
  • Thinly slice the cucumber, either with a knife or with a mandolin
  • Part the avocado, remove the stone, and smash the meat, or use a melon spoon to make little balls.
  • Drizzle the avocado with a bit of lemon
  • Arrange salmon and cucumber on a plate, and place dollops of  avocado around. 
  • Drizzle the salmon and place with the honey dressing
  • In the end, grate a little horseradish over the dish, and serve. 

You can always serve with the rest of the horseradish root on a small plate, so people can help them selves to more, should they wish, as well as with little slices of dark rye bread.
